family was up for the challenge. “We have been working on the building since February. It’s been an enormous amount of work but we are pushing through,” said Trina. “And now, now it’s finally all coming to fruition.”
The bakery opened Tuesday, August 16, 2017 for business offering coffees, smoothies, Italian sodas and their staple pastries, muffins and cinnamon rolls. In the future when they are ‘rollin’ in the dough’, Jacob plans to serve up his croissants, bagels, Danishes and other puffed pastries. Whatever they sell, the Wrights can trace back the ingredients in coffee or foods to a local grower or seller. “Our tea is from Kansas City and the coffee beans are roasted by a company in Kansas City. A company who knows the farms those beans
are grown on and the names of the employees on those farms,” Trina said. “We want to keep the food as close to home as possible and know our products well.”
They also desire to sell local goods in the lobby area. “Using and selling local products helps our community,” said Jacob. “Pleasant Hill has been good to us. We want to pour back into the community.”
Trina was in agreement. “Yes, we really want to be able to give back. Every step we’ve taken in the process has been very intentional. As we get off the ground we’d also like to start offering products cyclists coming off the trail will like.”
Trina and Jacob both expressed that they desire for this to be a service oriented business. Both have strong faith and would like to give back because of how much they have both been blessed. “We love being a part of this community, especially in the downtown area,” said Jacob.
“We want to offer a fabulous product – wonderful baked goods and coffee.” said Trina. “We are not in it to just make money – Jacob and his fiancé, Ashley, want to be able to raise a family on the money they make but we also all want to give back.”
Tori, the Brightside Bakery ‘barista in training’ has been a wonderful employee. She has learned how to use a drill and done a bit of construction. “She’s been amazing,” said Trina. “She even helped us
renovate the building.”
The building itself is rich in
history. “There used to be a textile plant here in the 1830-50’s. Then they tore that down and built this building in 1959 as a filling station. After

that it was Steve’s TLC Auto. I just fell in love with this building: The location, the history, the open ceilings. I have always loved downtown and am excited to open a business down here.”
The bakery can be reached at 816-987-5623 and will be open MWTFS 6-4 and Sunday 12-4, closed on Tuesday. It is also their desire to offer live music twice a month.
